Our Impression: I was recommended by Rob at @small.scale bakery in Belleville to try out this coffee (thanks for the recommendation)! I’m a huge fan of Ethiopian coffee as they typically share similar bright, floral flavours - this coffee will have early flavours of strawberry with a latent semi sweet dark cocoa flavour. If you get a coffee from the Guji region from any roaster, you can already know what to expect in flavouring if you’ve had any coffee from this region. I sampled this coffee back in January, and dove in to pick some up to share with you! This is Railbed’s first retail naturally processed coffee! Prepare your palate for some of the brightest coffee Ethiopia has to offer!
Try this Aeropress Recipe with this coffee! 
This recipe calls for a longer contact time with the coffee, with a gentle stir at the end. I prefer this type of recipe more with naturals and lighter roasted coffee. I find longer contact time with lower amount of beans pull out the flavours deeper in the organics of the grind. It's a very simple and basic recipe, but it tastes great with this coffee. 
Coffee: 15g
Water: 200g Third Wave Water (standard profile)
Water Temp: 94c
Brewer: Inverted method
Filter: Standard Aeropress paper filter - rinsed
Grind: Set to 5M on a calibrated Baratza Vario with steel burrs. Or on a 1-10 scale (1 being espresso, 10 being french press) set it to a 4. 
0:00 - pour 200g coffee agitating all coffee and let it sit
2:00 - stir in all the crust gently with a non-absorbing (I use plastic) chopstick. Put on filter, flip to cup, and press over 30s.

In addition to the outstanding quality we’ve consistently found from Dimtu’s outgrower groups, their support and consideration for smallholders is among the most impressive we have seen. Farmers who decide to work with Dimtu and deliver their cherry to one of their 8 collection stations receive extensive training by technicians who travel to provide hands-on education on best organic farming practices, sustainability, and quality training. Farmers are also given seedlings, organic fertilizer, and local indigenous shade tree seedlings as a larger effort to restore some local tree varieties that are in danger in their region.
